250EX carb. jetting?!

What is involved in changing the jets in a '01 250EX carb. I want to carve out my snorkel and I know I will need bigger jets, I carved out the snorkel on my recon a couple years ago. I found out I needed bigger jets because it would not rev beyond idle. What are the steps to changing jets and is it just a guessing game on how big to go and then checking the spark plug. Also, would the KnN jet kit most likely have the jets needed. Thanks
