does anyone know how to take the choke off the 250ex...and does it help at all in performance?????

Personally, I would imagine you would only be able to measure the difference on a dyno, and then it would be slight.
Racing engines with carburetors don't usually have chokes, but then they aren't as concerned about easy starting or convenience as they are with weight and simplicity.
