what rotors swap out from other machines/years to fix up the old R? 400ex, 450r ??? I'm most interested in the rearend.

No. If you have a 400ex set up in the front you have to have 400ex rotors.

'88-'89 250R and 400EX use the same 3-bolt front rotors. In order to use a 400EX rear rotor on a 250R you will have to use a 400EX antifade, caliper and caliper stay. New and used rear rotors for a 250R can be found readily on Ebay.
