Well, it all depends on how much money you wanna spend. You can use the crank and cylinder jug from a 300. That right there bumps up the displacement about 40cc. I've seen a few 300's bored up to a 395, give or take a cc or 2. You can use a stroker crank, and get it up to like the 420's or 430's. It'll be hell to kick over, but it's some massive power in such a small quad. I have an older Dirt Wheels laying around. They talked about Jeremy Schell's old 400X. So there's quite a few cc's to be had. Like I said, it just depends on how much you wanna spend. Just check around with some companies.

The jug off a 300 won't be any help. The 250x and 300ex share the same bore.

They share the same bore, but they have a different stroke. I'm not sure that it having a shorter stroke also means a shorter length cylinder, but it's possible. The only way to tell would be to measure them

you just need a 300ex crank and rod
that makes a 250x 282 cc, or the same size as a stock 300ex
any big bore kit that fits a 300ex will also fit a 250x, it will just be 20cc smaller. so a 350 kit (300ex) is a 330 kit in a 250x

correct! you will need to specify that it is for a 250x tho, but you need the 300ex 350cc bore size. the reason for this is the wrist pin is in a different spot on the 250x
