What's the best kind of grease to run in the swingarm pivot bearings and the shock linkage bearings? Well basically just needle bearings in general

As long as it's grease it don't really matter. Probabley like a yellowish waterproof grease. I'm not really sure but that's what i use and my swingarm bearings are still good after 2 years.

I use whatever is in my grease gun at the time. I put new axle bearings in my bike today and used a sort of see through yellowish grease.
